For those of you who remember the epic David Lynch show, they know how important to agent Cooper his cherry pie was. It was the perfect pastry to go with a warm cup of coffee when he was pondering over the events of the Laura Palmer murder. A tribute to a beloved, amazing and full of flavor show, this cherry pie goes out to all of you Twin Peaks fans. Let’s get going then.
You will need:
For the pastry:
275 grams of cold butter
360 grams of flour
1 tablespoon of sugar
1 egg
½ tablespoon of cold, icy water
For the filling:
2 kilos of cherries, pitted
4 tablespoons of sugar
1 vanilla sachet
Zest and juice of 1 lemon
2 tablespoons of flour
For the brushing:
1 egg
1 tablespoon of milk
1 tablespoon of sugar
Let’s make it.
In a large bowl put the butter, flour and sugar and using your fingers, mix until the mixture resembles coarse breadcrumbs.
Add the egg and water and mix to bring all the ingredients together, without kneading it too much.
Place the dough in a cling film and in the refrigerator for 30 minutes.
Make the filling by placing the pitted cherries with the sugar, the vanilla and the lemon zest in a large pot over medium to high heat. Mix often.
In a smaller bowl mix the flour with the lemon juice until a thick paste forms. Once the cherries have boiled and the sugar dissolved, add the lemon flour mixture and stir for a few minutes until the filling comes together and forms a paste like marmalade.
Preheat your oven to 175 degrees Celsius.
Take your pan and butter it so that the dough doesn’t stick to the bottom. Get the dough out of the fridge and divide it in 2/3 and 1/3.
Using a rolling pin, gently roll the large part into a sheet of 1 cm thick. Place it in the pan.
Add the cherry mixture on top and get the rest of the dough and form strings.
Crisscross the surface of the cake with the strings. Brush the crust with the egg and milk mixture and sprinkle the sugar on top.
Bake it in the oven for 35 minutes or until the dough strings are golden brown.
-If your dish is small you can cover the pie entirely on top. Mine was big so I did the strings.
-Use fresh sour cherries and pit them. Nothing compares to fresh ingredients. Personally I despise the canned cherries.
-You can omit the lemon juice and go for water if you don’t like it too sour. I would suggest that if you do that you should add a pinch of cinnamon in the cherry mixture and pieces of dark chocolate. It won’t be a Twin Peaks cherry pie however.
